  1. Japanese vegetarian curry

Ingredients required

  • 3 cups vegetable broth

  • 1 onion (sliced)

  • 1 carrot (sliced)

  • 1 bell pepper (diced)

  • ½ eggplant (sliced)

  • 50 grams of mushrooms (sliced)

  • 2 tablespoons olive oil

  • Salt to taste

  • 1 bay leaf

  • 2 tablespoons of butter

  • 200 grams of all-purpose flour

  • 1 tablespoon garam masala

  • 2 tablespoons curry powder

  • ¼ teaspoon cayenne pepper


  • Take a container and heat the butter in it. Add the all-purpose flour and mix well so that it does not form lumps. Cook until the mixture changes color.

  • Now add the curry powder, cayenne pepper and garam masala and mix well. Reserve this mixture.

  • Heat the oil again in the pan, add all the vegetables to it and fry well. Cover the lid and allow the vegetables to steam for 5-10 minutes or until tender.

  • Add the vegetable broth to the vegetables and cook until boiling.

  • Now add the prepared masala to it, mix well and cook for 2-3 minutes.

  • Lower the heat and enjoy with rice or chapati.

Ingredients required

  • 1 onion (chopped)

  • 1 block of tofu (diced)

  • 1 tablespoon sesame oil

  • 1 tablespoon of soy sauce

  • 1 tablespoon chilli paste

  • 1 carrot (sliced)

  • 1 cucumber (sliced)

  • 1 avocado (diced)

  • 50 grams cabbage (chopped)

  • Lemon juice from 1 lemon

  • 50 grams of brown rice (cooked)

  • Sesame seeds


  • Take a frying pan and heat some oil in it. Now add the tofu and sauté it well. Keep it outside and set it aside.

  • Now heat another tablespoon of oil in the same pan and sauté the onion, cabbage and carrots. Add soy sauce, chili paste and brown rice and mix well.

  • Stir in lemon juice and serve with sesame seed garnish.

Ingredients required


  • Take a saucepan and boil some water in it. Now lower the heat and add some miso to it. Stir well so that the miso dissolves completely without lumps.

  • Now add the remaining ingredients to the mixture and stir well until the mushrooms and tofu soften.

  • Stir and serve.

  • Take a bowl and mix the sugar, rice vinegar, sesame oil, chili paste and salt.

  • Now thinly slice the cucumbers.

  • Pour the prepared mixture over the cucumber, mix well and leave to marinate for about 30 minutes.

  • Serve, sprinkling sesame seeds on top.
