Taking the time to plan, plant and maintain a garden can be a lot of fun and relaxing. But what do you do when it’s time to harvest and you’re up to your eyeballs in produce? Sign up for NC Cooperative Extension, the Currituck County Center’s Home Food Preservation series, and learn how to preserve whatever produce you harvest.

Join us from noon to 2 p.m. for a hands-on food storage experience. Each class requires a $15 registration fee, which includes treats and canning recipes. Check out the dates and class descriptions below to see which classes you might want to attend, then visit to reserve your spot.

April 13 – Jam making

Learn how to make strawberry-kiwi jam with powdered pectin. The principles of making this jam can be found in almost all jam recipes. We will demonstrate how to use a water bath canner to process the jars we are preparing.

May 18 – Stripping

In this course, we will focus on making quick pickles and then preserving them using a water bath canner. We will also discuss how to safely use other methods of pickling and processing pickled products.

June 15 – Salsa

We are going to make a vegetable salsa and process it in a water bath canner. I’ll provide other recipe recommendations as well, but this recipe is a great way to supplement produce from your garden with other locally grown produce.

We have additional courses coming in July, August and September to include pressure canning, fermentation and dehydration.

Checks and cash payments can be received at the Currituck Extension Office located at 120 Community Way in Barco within five days of registration. Class sizes are limited and full registration, including payment, is required to hold your place.
